Granita (known in the US by their wayward cousins the Italian Ice) traces it history back to Arabic rule in Sicily. Arabs brought with them “sherbet” namely an iced beverage flavored with fruit juice or rose water. Sicilians copied this recipe by using snow collected during the winters on Mt. Etna, and stored away in special stone buildings erected over natural caves. During the hot Summer months, the ice was taken and covered with flowers or fruit syrups. This simple but refreshing recipe has evolved and now features an infinite variety ranging from lemon and blood orange to almond milk and summer figs.
